Recipe: Simple Panko Crumbed Fish & Chips


Food doesn’t have to be complicated to be tasty and healthy. Since opening in 2009, FRESH Mangawhai food-store and café has focused on quality, fresh, delicious food. Sourcing items directly from artisan suppliers and markets, together with an in-house commercial kitchen that produces over 40 products, has been critical to the success of this family run business. Simple Panko Crumbed Fish & Chips

  • Agria Potatoes
  • Tarakihi (or other white fish) fillet, sliced in two
  • Panko Breadcrumbs
  • Free-Range Egg
  • Flour
  • Rocket
  • Courgette
  • Cherry Tomatoes
  • Aioli 
  • Pesto oil
  • Lemon

Peel and slice the potatoes to chip size, lightly dust in flour, salt and pepper and place in hot oil in a 200 degree pre-heated fan oven for approx. 20 minutes, turning every 5 minutes. 

Arrange 3 bowls; one with flour, one with a beaten egg and salt and pepper, and one with panko breadcrumbs. Coat the fillet with flour, egg, and crumbs then lightly shallow pan fry in oil for approx. 3 mins each side.

Make a salad with courgette ribbons using a potato peeler, add the rocket and cherry tomatoes.

Serve the fish with chips and salad with a little pesto oil, aioli and a wedge of lemon alongside. 

This is a light and fresh meal bursting with flavour, allowing the ingredients to speak for themselves. The recipe is deliberately simple with no set quantities in order that the cook can create and enjoy, rather than be constrained. All ingredients are available in store at FRESH Mangawhai.
