Kids Can Cook!

Have you ever searched for a kids' cookbook and felt frustrated at the simplistic nature of what is on offer? Often assuming that kids are novices in the kitchen or know nothing of everyday kitchen utensils? 

Mangawhai based photographer, Josie Gritten, has embarked on a journey to remedy these shortcomings. She aims to make a cookbook for kids who have culinary prowess and  who love to spend time in the kitchen, cooking up wholesome meals and hearty treats.

Fig & Sour Cream Muffins

1 packet mascarpone cheese

125g softened butter

1 tsp vanilla essence

1 cup caster sugar

2 eggs

¾ cup desiccated coconut

1 cup self-raising flour

½  cup plain yoghurt

8 medium figs, halved

Method

Preheat oven to 180 degrees celsius.

Line muffin tins with squares of baking paper.

Beat butter, essence and sugar in a bowl until light and fluffy.

Beat in eggs, one at a time.

Stir in coconut, flour and yogurt.

Fill muffin tins up to a quarter full then add a blob of mascarpone cheese. 

Place half a fig on top and push down a little into the mixture.

Bake in the oven for 20-30 mins.

Allow to cool before serving.
