IT STARTED WITH A STROOPWAFEL

For Lynn Van Dommelen, a simple Stroopwafel and a warm cup of coffee sparked an idea that would bring a taste of the Netherlands to Mangawhai.

Born out of a moment of homesickness, DutchDough is a story of tradition, passion, and a love for authentic Dutch treats. Originally from the small village of Elshout in the Netherlands, Lynn grew up surrounded by the comforting rituals of Dutch baking.

Friday mornings were spent at the markets with her family, where stopping at the Stroopwafel stand was a highlight - watching as the thin, caramel-filled waffles were pressed to perfection before taking that first warm, sticky bite. Those childhood moments, paired with unwavering family support, nurtured her lifelong passion for pastry.

Before moving to New Zealand, Lynn honed her craft in a Michelin-starred restaurant and later became a pastry instructor, refining her expertise in pastry and chocolate-making. Many in Mangawhai may recognise her from her role as head chocolatier at Bennetts, but it was a moment of nostalgia that led her to embark on a new journey.

One day, while enjoying a Stroopwafel the traditional way - resting it atop a warm cup of coffee - she realised she could make them herself. Months passed before she finally purchased a speciality waffle iron, and with that, DutchDough was born.

Each Stroopwafel is delicately pressed until golden brown and filled with rich cinnamon caramel. Every batch is made fresh each week, ensuring a taste experience that is both traditional and high-quality.
